I don't know how to fix it, but a likely cause is that between 18.04
and 20.04, Ubuntu started providing Chromium via a snap package rather
than a traditional .deb package.
Ubuntu moved Chromium to a snap package so that they only have to
maintain one snap package for all currently supported releases of
Ubuntu.
Can you manually add an item to the launcher? That might be the simplest fix.
If I knew how to add an item to the launcher manually, I could probably
do it. It would be a useful thing to know.
