With regards to an OSGeo-Live based course, we do have an abstract which
you can make use of or customise:

The assumption would be that you run through the existing quickstarts in
the documentation.
If you are still looking for presenters, you might want to look at the
OSGeo Advocate list and approach likely candidates directly:

many FOSS-interested scientists in Vienna :-)
