there is no reason to make a entire disk dump.
equal which tool. from my point of view.

i use pfSense now since the beginnings.

just do a backup over the menu
install a new box
open the web interface and stop the wizard
open the restore over diagnostics, put he backed  config in
and look that you have the wan interface connected and selected right
( if different nic types)

packages will be pulled automatically after the restart of the box.
(if connected to the WAN-Net)
if you backed up also the rrd-data, those graphs will also be fine...

the only reason i can see to make a full backup is squid or other dynamic
data.

but as the kind of data say, they are dynamically rebuild.
log files from squid or something else can you transfer per tar through
nc/ssh p.e.
