Even though the one-frame capture via v4l2-ctl seems to work:
 # v4l2-ctl -d0 --set-fmt-video=field=interlaced
 # v4l2-ctl --device /dev/video0 --stream-mmap --stream-to=x.raw
--stream-count=1

, Gstreamer is still not happy:

# gst-launch-1.0 v4l2src ! kmssink
