Try to see that RPC is working properly & the shares are really exported:
from the server run: rpcinfo -p 0 (shows RPC) -> check for NFS entries showmount -e 0 -> check that you see the shares you expect from the client run the same commands just with the IP address of the server instead of 0 sometimes /var/log/messages on the server can be useful as well, for instance when you have permissions problems because of bad DNS configurations.
