Distros generally stick to mainstream kernel modules (though they might provide some other modules as seperate packages, which are not installed by default).
2) Two exceptions I can think of: printers - related to version of printing system (look for cupsys, foomatic-db etc.) and digital cameras - related to version of libgphoto2.
To start with, you can make a list of the kernel version for various distros (possibly list also latest version available as a seperate package).

Notes (why this list is not really useful as is):
* This is just the result of a quick google (I tried to figure out what you'd get if you just install from the official cd image) -
I'm not sure this is exact and it's certainly not complete (I use none of the above).
* All mentioned distros provide some packaged latest kernel (2.6.11).
* This only reflects status today. Whenever someone makes a new official release - they'll jump to the top of the list.
