Seconded.

It is my experience that agreement changes are possible, it requires
some negotation and possibly a delay in signature but is worth it. After
a possible employer evaluated you and found you qualified for the job it
is less likely that he will just say no to the simple request of
allowing you to do your OS/FS projects which are not work related.

It does require you to be persistent and negotiate it, though, the
default contract may not be in your favour and changes require some work
to get them approved.

Note: they may wonder how comes you expect to have free time to
actually do any such projects.
