Well, in the Technion, The Electrical Engineering department has a
computer farm with many Linux workstations on it. It is used to teach
students the course "Mavo LeMa'arakhot Tokhna" (Introduction to Software
Systems). 

Plus, Linux is covered in the course "Mivne Ma'arakhot Hafa'ala"
(Structure of Operating Systems). Both courses are specific to the EE
faculty. CS people cover Solaris in both of the equivalent CS courses.
