Some more information:

To be able to use the Hitachi DVD-RAM SCSI device as a removable
media you will need a new Linux kernel (i.e. 2.2.14).
The hardware device is recognized as two different devices by the
Linux kernel, one for the CD-ROM capabilities of the DVD-RAM and a
different one for the DVD-RAM re-writable capabilities (this
technique is called "ghosting").

After the kernel recognize your DVD-RAM, you can use the re-writable
device as a disk and create ext2 Linux native file system.
The UDF file system (that is the de facto standard for DVD-RAM) on
Linux is in its "experimental' stage. But if you want to transfer
data between Linux and Windows, then it is your preferable choice.
