Found:

https://btrfs.wiki.kernel.org/index.php/Manpage/btrfs-subvolume

A freshly created filesystem is also a subvolume, called top-level,
internally has an id 5. This subvolume cannot be removed or replaced by
  another subvolume.

Ok, it seems my idea (replacing the original root subvolume with a
snapshot) is not possible.
