Hi Margit - holly berries are usually more like emergency food for birds later in the winter. They should hang on until at least Christmas. If you pick them now, they won’t ripen I’m afraid, and most likely would fall off the branches.
I would take your chances and wait. I usually prune my hollies around Christmas to use as greens in the house. And then I put them outside in the snow and the birds finish them off. Hope that helps.
