Sorry for being so late to chime in on this. Fortunately, it's easier 
than you think:

  \once \set Score.tempoHideNote = ##t
  \tempo "Allegro" 4 = 100

}

%<---------------- SNIP ------------------

The override just hides the tempo note (go figure) and not the 
"Allegro", so you only need the one \tempo instance.
