Well, it is documented somewhere:
<URL:http://www.gnu.org/software/emacs/manual/html_node/emacs/Emacs-Server.html>.
Arguably, it may be somewhat optimistic for the LilyPond documentation
to assume that prospective Emacs users would already have catered to
having a working emacs-server setup.
