Hello, While the "interface" (the text editor GUI) of Lilypond doesn't work with Lion using the last stable version, the command line works without problem. In that way, if you plan to use it thru a dedicated text editor (jEdit for instance), it will work without a problem because theses editors (jEdit, TextWrangler, Frescobaldi, TeXShop etc.) call the command line program in the background.
The other option would be to wait for the next stable version that works with Lion and Mountain Lion (last development version work without problem). It's a matter of weeks, I should say.
