As a pianist, I can tell you it absolutely does reflect common engraving practice for piano staves: It is a very rare piano score (perhaps 1/10 of 1%) that contains only a single staff. That is precisely the reason Keep_alive_together_engraver was [fairly recently] added to Lilypond. Of course, engraving practice is different for other multi-staff instruments (e.g., harp often uses a single staff) — but in that case, you can simply define a custom context (e.g., HarpStaff) in which the Keep_alive_together_engraver is removed by default.
