i don't think there is a way to put context properties in a variable.
but defining these properties in a \layout { … } block will do the thing:
\layout {
\context {
\Score
% \remove "Bar_engraver"
defaultBarType =":"
\remove "Bar_number_engraver"
}
\context {
\Staff
\remove "Key_engraver"
\remove "Clef_engraver"
\remove "Time_signature_engraver"
}
