Try putting \once \override Hairpin #'to-barline = ##f in front of the
crescendo / decrescendo you want to extend beyond the barline. Like
this.

\time 3/4
d'4.^\< (e'8) fis' [(g')]
a'2 b'8 (cis'') d''4^\mf ( \once \override Hairpin #'to-barline = ##f
cis''^\>) b'4
a'2^\! \breathe b'8 cis''
