If you want this notation just on the top note of a chord you can place the
fingering outside the chord brackets:
<g-3 e>^\markup { \finger "2 - 1"}
But of course this doesn't work for fingering on inside notes of more
complex chords.

I have a chord, where the note at the top can use one of two fingers.
In the original music, it has a 2^1 notation (^ is a slur).
I tried something similar to

(although this can be understood a a finger change)
But lilypond recuses to process it:
