That's a very good question, which I forward to bug-lilypond.
If you click on "grob-interface", you will notice that stencil is listed
among the "Internal properties", which probably explains why it isn't
listed on the main page of the graphical object.
I don't think this is a good idea, since we already have a number of examples
in the manual, Tips&Tricks and LSR that involves redefining stencil and as
the documentation is generated now, it's for example impossible to figure out
what the default value of stencil is for a given object, unless you look in
scm/define-grobs.scm
