It is not allowed to use the "override" command within a chord; if you're working with lilypond 2.8, you can use the "tweak" command. Your example will work this way: <bes \tweak #'color #blue g>4 It will produce a chord with a blue g. It is not needed to revert the color to black, because "tweak" changes the property only once at a time.
