Section 10.1.6 "Vertical Spacing" of the user manual says that the default padding of every staff is specified by
\set Staff.minimumVerticalExtent = #'(-4 . 4) so you could force the staves further apart by doing that \set for each staff (but using a bigger value than 4, like #'(-7 . 7) And section 9.1.2 "Changing Context Properties on the Fly" has an example that says that \set autoBeaming = ##f is equivalent to \set Voice.autoBeaming = ##f because autoBeaming is a Voice property, but that one *could* say \set Staff.autoBeaming = ##f to get this to apply to all the voices in a staff. From this, I conclude that you could probably (?) say \set Score.minimumVerticalExtent = #'(-7 . 7) to get it to apply to all the staves in a Score. There's a piece I'm going to have to apply this to in some form, but I'm still working on the actual music and haven't gotten down to the layout problems yet.
