You can avoid creating a WAV file by piping the output from timidity straight into lame (- indicates standard output/input): $ timidity … -o - input.midi | lame … - output.mp3 I only use WAV files when I concatenate several input files and/or compand the audio, both using sox. (Companding is useful where the mp3 file will be played in noisy environments.)
