1) downgrade to tetex 2.whatever. I'm sure the fink docs (FAQ, manual, etc) tell you
how to do this kind of thing.
2) wait until there's a new lilypond package and/or lilypond-devel package.
IIRC, "can't find latin1.enc" is a known issue and there's patches around that fixes the
problem.
