The best way to move a text annotation further away from the stave is to set the padding property. There are several examples in the documentation and in the mailing list archives.
If you want a text like "f subito" to be treated exactly the same as other dynamic indications, when it comes to positioning you could define your own dynamic as described in http://lists.gnu.org/archive/html/lilypond-user/2004-08/msg00146.html
