Note-off velocity you may forget, this is rarely used or supported in the MIDI world.
Well, it is used and supported on my Roland FR-1b Midi accordion. The faster you let go of a button, the more of a "plop" it will produce.
Actually, I think it is fairly important for getting a realistic sound on releasing a note on a harpsichord
