\layout { \omit Fingering } is equivalent to \layout { \omit Bottom.Fingering } and omits Fingering in _any_ context with a Bottom alias. It's probably more targeted to write \layout { \context { \Voice \omit Fingering } } which specifically just addresses Voice contexts.
