For one, I can tell you that most (if not all) of Trevor Bača's compositions use LilyPond and they look beautiful. The scores "look" modern, contemporary, whatever you want to call it - it really shows the power of LilyPond, in my opinion. And also, Abjad is such an amazing tool to use with LilyPond; it changed my entire workflow in just the first 30 seconds of playing around with it. Score gallery: http://www.projectabjad.org/ (includes several of Trevor's pieces using LilyPond...) I'm sure there are a lot more examples out there in the LilyPond world...for sure.
