this may give you a starting point:

     $defaultpaper
     $defaultlayout
     (ly:parser-output-name)))

Brilliant! Thank you so much :-)
After figuring out that the $defaultpaper variable contains an empty output def and thus may be easily replaced, this fit perfectly.
