There's nothing special about Lyrics contexts, all contexts that are created after the start of the score will end up below the bottom stave. If you want them placed differently, you should set alignAboveContext or alignBelowContext, see http://lilypond.org/doc/v2.13/Documentation/notation/keeping-contexts-alive#index-lyrics_002c-aligning-with-sporadic-melody
