It can be changed, but here is the line from gub/installer.py:

  tar -C %(installerdir)s -zxf 
%(downloads)s/osx-lilypad/osx-lilypad-ppc-%(osx_lilypad_version)s.tar.gz

So, GUB uses the ppc version by default.
