So let me explain with a few more words, Donovan.

When Autocorrection is activated, it starts for example numbering / bullets
when you type at a new paragraph e.g.  "* apple" or "12.00 pause" and then
Enter.

In your case: if there is a paragraph with numbering, enter always continues
that, independent from Autocorrection being activated or not.
In this example typing Enter again, will remove the numbering from that
paragraph.

(And note that it looks as if in your example Edit > Changes > Record is on,
which makes it more complicated )
