Well, the solution turned out to be my fat-fingering of the /etc/fstab file
in the LFS partition.  When I looked at it for about the fifth time, I
finally saw that I had /dev/sda7 mounted as both / and swap.  I fixed it so
that /dev/sda6 is mounted as / and /dev/sda7 as swap and all is well,
behaving exactly as I had hoped.

Thanks to all for the various responses that got me in the right file to
spot the error.
