*Building* without a separate partition is easy enough - a blank
partition mounted to /mnt/lfs is much the same as an empty /mnt/lfs with
nothing mounted to it.

However, that will leave you with an LFS system in a subdirectory - not
something you can actually boot. But you could then copy that directory
to a new location, make any config changes to suite that location, etc.

And yes, you can build it on a USB stick quite happily, as if it were a
normal hard disk. The catch is whether the BIOS can boot from it, but
that shouldn't be a problem unless you're using very old hardware...
