If you really need to run Linux under Windoze, try the CoLinux (http://www.colinux.org/) project. It contains a kernel fully ported to run under windows, and once you install it, you just run it and it's like you have a full linux environment accessed through SSH. You need image files to use LFS. I just don't know tough if there are images containing just a minimal required to build LFS; but there images for Debian and Gentoo that you could use as base systems.
