Generally, I do set up /proc/config.gz but Debian doesn't.  One point is 
that it is only available for the running kernel.  I like to have older 
versions available for reference.

Agree.  I think that was done automatically as a part of the Debian live 
install.

That's true.  I tend to keep things around awhile even if they are not 
needed.  I'll delete them when I need the space.

So far it's not too bad.  ssl+ssh didn't take that long.  I copied over 
my /usr/src directory so now I have that backed up.  I still need fcron 
and rsync.  I do want to put sound on the system so I can play ogg files.
