I'm not sure if you need more suggestions, but I have seen some microswitches (usually in surplus places) that have a "one-way" feature- they have a spring-loaded lever attached that will trip the switch when an object passes on one direction, but fold if it passes the other way. That would let you trip the device when the door opens, but not when it closes . . . The part is a Micro Switch (Honeywell) BZ-2RW826-A2 One-Way Roller Lever Snap Switch.
