CALLER ID will recognize the call-waiting caller-ID from the CO? I'm talking about the caller-ID on the same line while the line is use, not the display of caller-ID from another line while you are on a call, which is what I think Panasonic's documentation calls "call-waiting caller-ID".
Also, I have seen external caller-id boxes that interface via the switch's serial port. Does anyone make a firmware upgrade for the KX-T61610 that would allow it to work with one of these external caller-id boxes?
Highly unlikely. The 616 was designed a looooong time ago, before CID was important.
Probably the best bet would be to swap it out for a TA308 or TA624.

Panasonic systems change CID info into a proprietary data format for display on system phones. Some of the systems (not the TA308 or TA624) can also send CID info to standard phones and displays.
