I would consider two separate remote reservoirs unnecessary extra
weight. Neither side should be "using" fluid, because these are not
self-adjusting calipers like cars have (unless you are using "car like"
calipers, which would be very heavy).  You shouldn't be "losing" fluid
either...there's just not that much to go wrong, and when it does, it's
pretty obvious where the leak is.  I've only seen "leaks" after I've run
off the narrow taxiway and into the mud, shearing off the bleeder valve
and opening up a giant leak, and even then, it was immediately obvious
from the plot's seat which brake was no longer working...
