Most engine-monitoring software for cars doesn't support direct sensor interfacing, but relies on the car's computer system built-in engine monitoring, and simply displays the data that's already been collected and processed....
Apart from aircraft with a FADEC, or auto-powered experimentals running modern car engines complete with the OEM (or substitute) engine management computer... You need a hardware/software combo that can take raw data from whatever specific sensors you use, and convert it into graphical displays that make sense to you.... Eg, industrial-automation/SCADA equipment, or one of those 'custom' packages....
