Taxi testing really won't give you that much of a feel for "pitch 
sensitivity" , other than lifting the tail on takeoff and holding it 
up on landing.  It will help to develop the skill for directional 
control on the ground.  Also, you shouldn't need 10 hours to "get the 
feel".  If you are not getting comfortable with directional control 
on the ground after an hour or two in the higher speed ranges, you 
either have something wrong with the gear setup or you aren't using 
the right technique.

As to pitch sensitivity, on your first flight, you should be 
comfortable with directional control with the tail up at near lift 
off speed.  Just leave the power in and when the KR feels light and 
thinks it wants to fly, use just a slight back pressure on the stick 
to lift off.  If you don't bring the back pressure in too fast or too 
far, you will lift off and not have any P.I.O.  Just hold the stick 
steady and look out the window to see what control movement relates 
to in aircraft movement.  By the time you're on downwind any P.I.O. 
tendances should be behind you.

On your first landing, don't try to hold it off too long and hit tail 
first.  No a fun way to go.  The KR wheel lands so nice that you'll 
wonder what all the fuss was about.

Don't let "control sensitivity" keep you from having a fun time in 
your KR............
