There are two kinds that I know of.  You'll need to determine which type
of sensor your panel gauge is designed to use.  

The simplest type is one that uses mercury inside a tube that runs from
your crankcase to your gauge.  When cold, the mercury resides in a
reservoir which is inside the sensor which you've screwed into your
crankcase at such a place where it will be immersed in the oil.  As the
oil temp increases the mercury expands and pushes your gauge needle. 
These gauges don't need electricity to work and are very accurate &
reliable.

The other type of oil temp gauge uses a probe that also screws into your
crankcase and is immersed in oil.  There's two wires coming from this
probe - one goes to ground and the other to your gauge.  This is the kind
of oil temp gauge I've got, although if I ever replace it it will be with
one of the type I mentioned first.
