Or you can do it the way the Navy does, using the "trigger" switch which is a two position momentary rocker switch. Center is "OFF", "UP" is radio, and "DOWN" is intercom.

The system uses two audio panels, but I'm sure that the I-COM could be wired to work in a similar manner.
