I am glad you qualified that at the end, because IFR ops do NOT add 500, and
they fly at pressure altitude above FL180 (set 29.92 in the Hobbs).

Always check local Sectionals and Terminal Area Charts for variations in
different regions. Florida does not observe the East & West altitude
adjustments although to file any Flight Plan you still use it. They will
normally re-assign you to an altitude for separation based on North and
South, odd South and even North since most traffic is flying North and
South. Check local areas for these kinds of possible variations. Some are
charted, and some only appear in Notams.

Mark, when cruising west from 180 deg to 359 deg magnetic, you should be at
even thousand feet plus 500ft.  When cruising east from 0 to 179 deg
magnetic, you should be at odd thousand feet plus 500ft.  VFR rules applies
above 3000 AGL and below 18,000ft MSL.
