I am glad you qualified that at the end, because IFR ops do NOT add 500, and they fly at pressure altitude above FL180 (set 29.92 in the Hobbs).
Always check local Sectionals and Terminal Area Charts for variations in different regions. Florida does not observe the East & West altitude adjustments although to file any Flight Plan you still use it. They will normally re-assign you to an altitude for separation based on North and South, odd South and even North since most traffic is flying North and South. Check local areas for these kinds of possible variations.
