I suspect that during acrobatic events that it is much like drag racing. The 
helmet goes with the nature of the activity, and there is a much greater chance 
of crashing or a bad landing/roll etc....

The leather skins for open cockpits I would figure is for three things: 1 to 
keep the head warm; 2 to keep the bugs off and prevent the air from making your 
head feel like it is trying to pull all of your hair out (same on my 
motorcycle) ; 3 to securely hold a headset on your head for use of a radio when 
needed. A normal headset will not stay on in the windblast. The leather cap 
securely grips the head and places the speakers next to the ears. Most flying 
this way use and older style throat mike instead of a boom mike like on new 
headsets.
