Dan, Are you grounding the minus connection to the engine and the minus on the gauges to a different place? I had weird readings until I ran a ground wire from the sensors to the gauges. Then life was wonderful.
The voltages involved are minuscule. If you are using the engine-to-panel ground, you will have all sorts of voltage drops from other components getting involved.
