I think your Ellison EFS-3A is the gold standard. No float bowls, no adjustments ever needed beyond initial set up. Carb ice resistant. Aerobatic. The "mist bar" method of introducing fuel into the induction system contributes to an even distribution of fuel to the cylinders. I assume the 110 engine you're talking about is a Corvair? I also assume you know about or will be paying close attention to learning about the modifications necessary to make it a safe aircraft engine. Mark Langford has gone through this process, using the EFS-3A, and has made the process very easy to understand with his excellent tutorials.
You might save yourself some time and trouble and buy Dan Heath's engine. It's practically new and I'm pretty sure it already has an EFS-3A.
