Select your framework Click Subfields of the MARC field you want to modify. Click Edit Subfields. Click Show More Restrictions You'll see the plug-in that is used. In this case, it's marc21_subfield_007.pl The values displayed are in the template file of that plug-in. Just modify it and voilà.
