The list of changes are to be mentioned in the release note post on the website. I suggest to send pull requests to: https://raw.githubusercontent.com/KiCad/kicad-website/master/content/post/release-5.0.0.adoc
Currently that doc just contains some of the important changes that I have seen be merged, but probably not all. To make it an actual release note.
