The help should be clearer on what the end result of the action is, it would then be obvious the feature doen't work.

System Settings->Default Applications->Email Client should say the
application selected from the drop down list will be displayed; it would
be useful if this was what happened and the help said that. At the
moment the system doesn't do that and the help doesn't say that; it
reverts back to "Use Kmail as preferred email client.
