In the record dialog, on the 'Format' tab the 'Tracks' setting is what sets how
many tracks are recorded. Set that to 1 if you want a mono recording.
It would be good if the recording plugins auto-detected how many inputs were
actually available and limited the number of tracks to that. Which recording
method were you using? ('Source' tab, 'Recording Method' field)
